Dr Fahrenkrug has also been working on a famous mutation that increases muscle mass. This mutation, in the gene for a protein called myostatin, is found naturally in Belgian Blue cattle. Myostatin inhibits the development of muscle cells. The Belgian Blue mutation disrupts myostatins structure, and thus function. Hence the animals oversize muscles. Two years ago, in collaboration with researchers at Texas AandM University, Dr Fahrenkrug edited the myostatin gene of a member of another breed of cattle to do likewise. There may, though, be an even better way to grow muscle, the animal tissue most wanted by consumers, than on animals themselves. At least two groups of researchers think it can be manufactured directly.
